Cadaresca Grignolino d'Asti D.O.C.
Grignolino is one of the oldest native variety of Piedmont, mostly grown in Monferrato area; the name originates from “grignola”, a dialectal term that indicates the grape seeds, abundant in this variety.
It’s a very characteristic Piedmontese wine, anarchist and difficult to produce, “the reddest white wine and whitest red”.
Grapes are harvested by hand and after the crushing are transferred into stainless steel tank for the alcoholic fermentation. After 2-3 days the skins are separated from the wine and the fermentation is ended at low temperature.
Perfect with fish, white meat and soft cheese.
Ideal serving temperature: 14° C.
